Artisanal Italian Group – Head Bread Baker

Neighborhood artisan bakery in Long Beach is seeking a Head Baker / Bread Manager (title TBD) to lead its bread program. This role will oversee bread production and fulfillment across the board, as well as weekly farmer’s markets across the greater Los Angeles area. The ideal baker is passionate about local farm-sourced grains and continuously in pursuit of the best possible product.

This is an exciting opportunity for a baker who wants to showcase local ingredients, bring structure and intention to a meaningful bread program, and grow with an expanding company in Long Beach!

Head Baker Responsibilities:

• Ensuring that all bread items are prepared to specifications and standards in a timely manner.
• Training, coaching, and developing staff to achieve standards of excellence on a consistent basis.
• Overseeing food cost by adherence to recipes and procedures, minimizing waste and sourcing superior product at lower cost.
• Managing labor cost through efficient scheduling and monitoring of staff.
• Maintaining the highest standards of cleanliness and sanitation.
• Creating a positive work environment through effective communication and care for the staff.

Head Baker Requirements:

• A minimum of one year of experience as a Head Baker, or 2 + years as a Lead Baker with a bread focus
• An extensive knowledge and understanding of artisanal bread production and baking.
• Well versed in a variety of bread products and techniques, including but not limited to sourdough, country loaves, baguettes, English muffins, brioche, and ciabatta
• Lamination experience isn’t required, but a plus
• Attention to detail and the ability to produce bakery items to exact specifications in a timely manner.
• The ability to lead a small team with positivity to train and develop a team of confident bakers
• The ability to create recipes and builds.
• Flexible schedule to work early mornings, including early mornings (ex: 4:00AM)
